So, I don’t normally write down recipes, but it’s tailgating season and amongst all the hotdogs and hamburgers and chili and meat infused meals, the vegetarian in me, the clean eating mom in me, the RAW foodie in me had to, I mean HAD to share this Quinoa Salad recipe with all my tailgating peeps. This is 100% MY recipe, and it is 100% beloved by every member in my family. All the kids devour it, and it’s made up solely with fresh veggies and Quinoa … only one of the healthiest foods in the whole world!
So without further ado … here ya go!
2 cups Organic Quoinoa
6 cups Water
2 Organic Cucumbers chopped
1 Red Onion diced
1 Large Tomatoes cubed
1 cup Frozen Organic Corn
1 Red Pepper diced
1 Orange Pepper diced
1 Yellow Pepper diced
1 Bunch Italian Parsley Leaves chopped
1/2 cup Extra Virgin Olive Oil
1 Lemon Juiced
Sea Salt
Pepper
Bring the water to a boil in a large saucepan. Add the quinoa and return to a boil. Cook uncovered, over medium heat for about 12-15 minutes,. Strain and rinse well with cold water.
Transfer the quinoa to a large bowl. Add all the ingredients and toss well. Salt and pepper to taste. Viola, health and deliciousness simultaneously!!
